Minnan University of Technology is a full-time undergraduate institution approved by the Ministry of Education, with a focus on engineering disciplines and multiple disciplines including science, management, economics, art, literature, and education. It has the qualification to independently award higher education diplomas. The school was formerly known as Shishi Changxing Industrial School, founded in 1998; In 2001, Quanzhou Optoelectronic Information Vocational and Technical College was established with the approval of the Fujian Provincial People's Government; In 2008, it was approved by the Ministry of Education to be upgraded to an undergraduate university and renamed as Minnan University of Technology; In 2012, obtained the authority to confer bachelor's degrees; In January 2018, the school was newly designated as a construction unit for the establishment of master's degree granting and cultivation units in Fujian Province from 2018 to 2020.

In May 2023, Shaanxi Greelan Technology Development Co., Ltd. and Minnan University of Technology once again reached a cooperation agreement for four language labs. On June 3, 2023, the company's technical personnel officially entered the campus to begin installation. On June 7, the installation, debugging, and training of the speech room were completed and put into use.
